At best they find small fragments of bones, often from different species, different individuals, and then slap together a fiction to try to sell to the public. While it is true that finding a near complete skeleton of something that lived millions of years ago is very rare, some that are near complete have been found. Like Sue the T. Rex, now in Chicago.
On the other hand, giant humanoid skulls have not been found. The closest would be the Olmec colossal heads, which are carved stone.

Fallout 76 was apparently garbage in video game form.
