I order it without the tomato and sport peppers. I like pickles so I take out pickle spear and eat it separately and then am left with just the mustard, onions, and relish to go to pound town with.

Eh... the best Chicago Hot Dog joints (like Jimmy's on Grand or Gene & Jude's in River Grove) make their dogs with mustard, relish, onion and 2 sport peppers. In fact the only places where I've seen the dogs served with tomato, pickle, etc is chains like Portillos.
IMO what makes a hot dog "Chicago style" is the 100% Vienna beef that's used AND no ketchup... steamed just right there is NOTHING better (including Nathan's). How else you top the dog is your preference.

I don't like ketchup on a dog.
Ketchup is a child’s condiment. Mustard FTW. Especially spicy brown, or coarse German.
I almost never have a dog, but a home made LA street dog can be pretty good. I say homemade because normal street dogs while delish, are questionable in what brand of dog is used.
Beef hot dog wrapped in bacon and grilled. Brown mustard, bbq sauce, dill pickle chips, grilled onions.
