User Control Panel -> Board Preferences -> Edit posting defaults -> Notify me upon replies by default

I'm still working on a solution for when you're quoted specifically, but do this in the meantime.

User Control Panel is in the upper right corner of the screen I think. Just click the appropriate tabs and headings therein.
